Last Night's Dinner

Healthy, low carb & loaded with fiber! I make this often, only because it is ohhh so simple.
There’s nothing like a hearty bowl of homemade vegetable soup on a cold night.
Ok, so I cheat a little. A lot. I use V8 juice. I also add water and vegetable broth. But this broth is about 2/3’s V8. For those on a low sodium diet, the low sodium V8 tastes great too.
Frozen veggies like broccoli, cauliflower and frozen diced potatoes make this easy. The only canned veg’s added are green beans, after I rinse them, and petite diced tomatoes. Fresh onion, garlic, chopped spinach and finely chopped cabbage are thrown into my pot. Truth is, you can’t go wrong with this. Add any of your favorite veggies, so many mixed varieties are pre-bagged in the freezer section of the grocery store.
I let this simmer for about 45 minutes, having salt (optional) and peppered the soup. The last, and secret ingredient is a generous shake or 2 of creole seasoning (like Zatarans). This ups the sodium level, so consider that. Creole seasoning gives the soup a KICK! If you are planning on feeding little ones, you may want to leave it out.
Try it out! Tailor it to your own liking using as much or as little of the V8 as you prefer. That is the beauty of this simple soup! Guilt-free, low carb and family-pleasing. You will be happy to have found a new winter staple!
