SPICED UP CHOPPED UP SALAD
We tend to think of salads as healthy bland, tasteless side dishes. Hey! Who said salads have to be boring? This far-from-boring salad & vinaigrette recipe deliver an explosion of flavors. Oh, you’ll still get your fiber, nutrients and vitamins. Only they will be delivered with a spicy KAPOW!

Chopped Salad Ingredients
- Spinach
- Iceberg lettuce
- Cabbage
- Shredded carrots
- Cucumbers cut into rounds then the rounds cut in half
- Radishes cut into rounds
- Yellow onion cut into about 1/4 inch squares
- Jalapeno cut into rounds.
Mustard Jalapeno Vinaigrette
- 2 cups olive oil
- 2 1/2 cups white vinegar
- 1/4 to 1/2 cup of yellow mustard
- Salt and pepper to taste
- Approx 4 table spoons of minced garlic
- 2 table spoons garlic powder
- 2 table spoons dried dill
- 1/2 teaspoon of thyme
- 1/4 teaspoon cumin
- One jalapeno finely minced

Chop equal amounts of spinach, iceberg, and cabbage into small pieces. Mix with other salad ingredients.

For vinaigrette, whisk ingredients together in a bowl. Tip: Flavors blend better when they’ve sat in refrigerator 24-48 hours.
